Does anyone know where i can purchase or order Low methoxyl pectin? and also if have you worked with LM pectins would you give me some informations about its Gel properties? im trying to produce hard rigid gels and want to get sure if LM pectin can give me this mentioned properties.
Well known suppliers that might help are Cargill and Danisco. If you type "pectin taco nicolai" into Google Scholar, you will find links to two papers on Researchgate about how to make model LM pectin gels and their properties. LM pectin gels can have a wide range of properties, including those that you mention. A simpler solution might be to use agar, available in your nearest microbiology lab.

It depends whether or not you are looking for a water soluble gel. If not, you can have a very strong gel by using a di-valent ion like Ca ion. To this end, you can use a CaCl2 solution for adding into a low methoxy pectin solution.

Thanks alot for comment, yes my phd thesis is on encapsulation probiotics with LM pectin and protien mixture but unfortunately after many contacting i had with suppliers at Iran i was unable to get LM pectins i also contacted to those companies that Dr. Parker recommened which they didnt help neither! So im wondering where i can get pectins from?
