The black soldier fly larva Hermetia illucens is the best candidate for you to evaluate the bioconversion of food waste. In coffee farms during the coffee processing, pulp wastes are decomposed by soldier fly larvae, and they are very abundant in those places so is very easy to collect larvae in the field. There are some comercial farms in the US that sell larvae of black soldier fly like this one:
I've found several companies in the US that sell the larvae but I'd like to use a colony reared in Mexico. Now, I'm thinking I could find them near coffee farms here in the country. Thanks for the response. I'd also like to know more about the development of this technology in Colombia.
