I've learned latex basic theory from them and I also used overleaf as my latex editor. Then I started writing my own project and when I got stuck, I asked to google, that "How to do this/that" . That helped me a lot. I suggest you to start working on any template, that will help you understanding the psychology of latex.
Browse the journal for LaTeX template and upload all the supporting files of the template to overleaf and start editing in the template. Definitely google and youtube will help you out if you find any difficulties. But the majority of the job is done if you can get the LaTeX template from the journal website. If no such template is available then there are a plethora of templates available in Overleaf. You can browse and choose the one that looks pleasing to you.
Organization is key in any paper, and a scientific paper is no exception. Splitting your document into smaller, cohesive elements which focus on specific topics is beneficial to both the reader and the author. LATEX makes it easy to to this with sections.
LaTex was machine code of publication - the world moved on to wysiwyg only about 30+ years ago. Any publisher that only takes submissions in that archaic language is being rather stone age. Camera / publication ready copy can be created in so many easy to use tools that to insist on using an ancient relic just places unnecessary barriers to entry.
If that same publisher does not provide article templates just vaguely worded "guidelines" then you know you are dealing with a publishing dinosaur or paper generating mill that provides no value add - look elsewhere.
Sure LaTex was a good and relatively bug free system, used by many, but pushing authors to be typographical mark up compilers is like asking painters to be chemists and make their own colours.

Using overleaf, you don't need to download any software on your computer. Moreover, you won't face any problem of missing packages in your pc, I often faced such problems in TexStudio at the beginning. I would suggest uploading some easy templates in overleaf and editing them. Try different templates with equations, figures, single column text, double column text. Each time, try to understand how the core is working, you will learn LaTex gradually. Finally, after some experience of documentation in overleaf, I suggest you download Miktex and TexStudio because you may not access the internet all the time but you may need to prepare your documents in LaTex.
