i am looking for some methods to be used to recover the evaporated water release to atmosphere because of hot air dehydration of vegetables and fruits.
you ae requesed to suggest me some method or cn help from where i cabn get the help.

Probably, the use of heat pump drying technology will be suitable for your case? However it is a question of air temperature, which you are using.
It might be a good idea if you set an air trap at out let point. you can conduct the hot air through a tube connected to a beaker but it depends in what scale are you doing this, lab scale or bigger scale.
