So, Is there is any method to prevent the re- stacking of graphene sheets after the reduction of graphene oxide?
prevention of re-stacking can be done by partial reduction instead of complete reduction (i.e using mild reducing agents), modifying the surface of graphene layer with some functionalization.There are many ways to modify graphene surface.
In aqueous dispersion, you can use soaps like SDS or SDBS and then reduce it with NaBH4.

I think the partial reduction should affect badly the electrical conductivity of the final product.

I dont know any influence. But these should be minor if you usw high quality GO with less vavancy defects. Conductivity decreases very strong with missing carbon atoms in the lattice structure. Try to use a good carbon source and a mild route like Eigler er. al. And avoid Hummers and Charpy's method.
I think centrifugtion at higher speed before reduction will help to avoid re stacking of graphene layers.
