If you want to do SEM analysis for hydrogel samples, you need to freeze dry the hydrogel, then take a section of freeze dried hydrogel and take SEM.

Freeze drying, also known as lyophilisation, is basically a low temperature dehydration process.

Yes, freeze-drying is OK. But what is the actual purpose of (intended) SEM analysis? You have to have in mind, that you'll be able to observe the surface of your sample (the composite of gelatin and ZnS NPs). I suspect you are interested in ZnS particles... some sort of washing the gelatin and filter out the ZnS particles would be then a way to go.
