There is an EnergyPlus object, ZoneCapacitanceMultiplier:ResearchSpecial (in Simuilation Parameters). In this object you could modify the value of the Humidity Capacity Multiplier. In the manual, the description highlights: "This field is used to alter the effective moisture capacitance of the zone air volume. This affects the transient calculations of zone air humidity ratio. Values greater than 1.0 have the effecto of smoothing, or damping, the rate oc change in the water content of zon air from timestep to timestep".
