Hi! I have read articles that uses sodium borate to gel Tara gum, but I am using tara gum gel for food applications. Hence, I need a food grade ingredient or method.
Borate gels by crosslinking the tara chains. I don't think that any food grade electrolytes have that effect. You can form gels by mixing tara gum with xanthan or kappa carrageenan. Vary the tara/X ratio and the total concentration to optimize the gel properties.
