I want to estimate water volume from different water surfaces. I have used Landsat data before. Is there any method to extract water volume from NDWI or other Landsat bands?
If not then, what are the other satellites or sensors can be used to estimate water volume?
You might look into Green LIDAR if water is clear. It has been used to estimate stream or river depth and morphology. I am uncertain of the limit of its depth capability. I am not familiar with or an expert on any other technologies that may have this remote potential. There is a television series Drain the Oceans I think is the name, where they visualize the removal of water from oceans or other water bodies. Apparently there may be some tools to facilitate this, that might be applied to your interest. And a number of agencies have used boat or ship based radar to help map bathymetry.

You might want to have a look at Satellite Derived Bathymetry (SDB) from multispectral images. Empirical (band ratios and calibration data) or physics-based approaches (radiative transfer model inversion) to extract the water depth are described in multiple studies using sentinel-2, landsat-8 or higher-resolution sat. imagery.

The type of sensors to use will be depended on the type of water bodies you are looking at. Clear or turbid; shallow or deep; large areas of narrow stream; one time or multi temporal; or ??? Give me some of this information and I will be able to better say what might be useful.

Sensor type is one of water dependants of water bodies. Try to use green Lidar as it has been used by many researchers to estimate morphology of water or stream as well river depth.

You may extract the depths using optical empirical remote sensing models, and estimate the area by separating the water from the land using NIR band.

Water bodies in my study area are shallow clear ponds and lakes. And I want to calculate multi-temporal volume.

In order to calculate the volume you first need to have a DEM (basically the bathymetry for the area under water) of the lake / pond bottom. If you are working with areas as small as ponds then you will probably need an airborne lidar bathymetry to get high enough resolution. I used the SHOALS system in the late 90s early 2000s to map the bathymetry of a coral reef area in Hawaii; very clear waters and the blue-green laser penetrated down to approximately 45 meters. I used a digital camera with a blue-green band and high gain settings to get brightness information of the bottom; down to about 40 meters.
If you can't use an airborne lidar system, then perhaps you can consider getting 'the amount of volume change' by tracking and analyzing the change in the shore line (goes up or down). By getting a DEM of the shore line and surrounding areas you could track the ups and downs of the water level and that way get a 'change in volume' rather than the total volume itself.
