I am trying to buy pepsin for an experiment (protein extraction from a certain type of meat), which requires me to make up a concentration of 6KU/g of meat. Having a look online I came across a product whose activity is only described as 1:10000, plus the description "Will digest not less than 3000 and not more than 3500 times its weight of coagulated egg albumin".
Does anyone know what this means or how to convert it to something I understand?
There are different unit definitions for pepsin. You will have to first look up the unit definition employed for that 6KU/g requirement and then try to find the equivalent from whatever it says on the label of the product you intend to buy. This might be useful:
