I am evaporating ethanol from a mixture and used the temperature up to 95 oC, but still, the mixture contains solvent. If it was ethanol, then it should evaporate at this temperature? I wish to confirm that is it possible that the ethanol gets converted to some other solvent during this temperature. Please share your expertise?

Thanks for your question. First it is expected that pure ethanol boils and evaporates from 78 degree Celsius. But this time around, it is no longer a pure ethanol. You have a mixture which probably might have some molecules of water or other substances such as oil or wax introduced from the extract.
One way you can check this if you still have some pure ethanol, is to take same volume and evaporate along side extract and note the difference. Also, I will suggest you check the purity of the ethanol. You can do this by checking the specific gravity and the refractive index and compare it to standards.

I would also suggest that you could obtain a 1H nmr spectrum of the solvent mixture you have to find out any presence of Ethanol. A 1H nmr spectrum would provide the presence of peak patterns of ethanol as shown in the attached 1H nmr spectrum below. If you do not see any peak pattern such as the spectrum shows you can assume it is free of ethanol.
