I have been sponsored by the EPRSC during my PhD and, at that time, I conducted a number of experiments. However, I have run out of funding 1.5 years ago and during this time I have been analysing the results and writing an article for the journal Environmental Research.
When providing information about the funding sources that supported the work, I am wondering how is the best way to mention the self-funding studies or whether it should be mentioned at all.
In google scholar, I have found two articles mentioning self-funded research, but none of them has been published in Elsevier.
I appreciated any advice on this matter. Thank you.
I don't think reputed journals would give room for explicit acknowledgement of self-funding. However, self-funding can be acknowledged implicitly by using the phrase "partially supported," which connotes a personal funding contribution. As an example, you might have a look at the funding statement in the following paper.

in the guide for authors of the journal of environmental research journal (Guide for authors - Environmental Research - ISSN 0013-9351 (elsevier.com)) is written:
"Role of the funding source You are requested to identify who provided financial support for the conduct of the research and/or preparation of the article and to briefly describe the role of the sponsor(s), if any, in study design; in the collection, analysis and interpretation of data; in the writing of the report; and in the decision to submit the article for publication. If the funding source(s) had no such involvement then this should be stated."
I take note of your suggestion: "partially suppoted"
However, in this case, I think I need to be more specific
