You may make them alcohol tolerant by gradual selection of hyper ethanol producing strains. Such strains shall utilize most of sugar with least residual sugar content.

Hi Yeye Lu, By the time it was established, there was no smart ways or techniques like today. It was all done by basic & traditional techniques and constant & combined effeorts of microbiologists, biochemists, chemical engineers, over a long period of time with trials and errors. Depending on Sugar source and control of cross contamination, fermentation can be bone in batch, continous and fed batch mode at industrail scale.
