Hello Markad, I want to believe that you are referring to the sizes of the fruit waste. If so, you could obtain this sizes by first blending or milling, followed by sieving through the different mesh sizes of your choice to obtain the particle sizes required. All the best.
So,for that my waste should be properly dried to pass through the mesh
Yes Markad, Do the drying first, mill or blend, sieve to generate the different particle sizes, then produce a substrate with controlled moisture content (or water activity) for the fermentation.
In civil engineering we use a set of different sieves, having mesh size, you may need to customize such sieves with local mechanism,
Dry your fruit waste at 65o C for at least 24 h in an oven. Grind it and pass it through sieves of desired mesh size. Then conduct SSF experiment with fruit waste of different particle size
