I am performing in-gel digestion. I wanted to know exact chemistry of the process by which 100% acetonitrile dries up the gel and turn it yellow.
The acetonitrile dissolves the water out of the gel which is a polymer that is not soluble in acetonitrile, and this causes the observed dehydration.
Extract acetonitrile, butyl acetate. Then dry under vacuum.
