I work with high school students in the area of Service Learning. We have students working with community groups and also going on international service trips. We want to be able to show impact among our in areas like empathy, love for others, grit, global citizenship, self awareness. I am looking for tools or to develop assessments for measuring things like this.

Thanks for the response. I do have ways like this to gather data. By Tools I meant Surveys or Questions or other ways of gathering Quantitative Data on things like changes in empathy for example before and after working with refugees.
There are numerous measures that focus on Non-Cognitive skills (such as those you've mentioned, like grit, empathy, etc) - so that direction might be best. It might also be useful to focus on a broad spectrum of skills, as whatever you focus on (in terms of discipline and approach) you will invariably fall down rabbit holes!
The methodology should focus on Pre-During-Post assessment, depending on the time frame. There are interesting studies looking at diaries to support the reflective process of students, that could offer some scope in terms of mixing methods to give a more holistic view. Some triangulation would be useful too, so perhaps a service user evaluation could be of help.

Have you considered designing a tool specific to the observable behaviours associated with the desired qualities identified? You could have student input as your pretest measures by asking open-ended questions relevant to each for example
' how do you show empathy in your community' etc.
You can then use the responses to guide, redirect behaviours and encourage acceptable actions in your instructional excercises aligned with noted reasearch practitioners in your discipline. Combining these should give you the foundation for the tools you need.

You can reach high school students in the emotional field by discovering their different tendencies, and working to accommodate them in education.
You can also use peer review and allow their peers who interact with them in team projects rate their affective skills. I must commend you on focusing on developing these softer skills as they are often overlooked in the curriculum.
