I need to statistically optimize the enzyme and manufacturing industry related process data. I can draw a surface plot using the below MATLAB code.

Lets say that I've 2 independent variables (x & y) and 1 dependent variable (z). How do I optimize and represent my statistical data numerically?
I recommend to use response surface methodology. You can use rstool command in Matlab, even with rsmdemo there is an example.
