I want to do simulation of pressure (longitudinal) and shear (transversal) waves propagating in solid in COMSOL Multiphysics using Solid Mechanics physics. Is it possible to do it in 2D geometry? Or, do I need to go to 3D geometry?
What is the best physical quantity to plot to show the propagation?

Creation of waves in any software is not much different from that in practice. What I mean is that you need to provide the conditions of the host structure suitable for creation of the wave of interest. For example, Guided waves need a specific thickness and surface (guide) to propagate on. In your case pressure and shear waves can propagate through the body (Bulk) and no need for aforementioned conditions. In COMSOL I prefer to simulate the waves using piecewise function because it is easy to include the required equation for the wave especially if you have a window.
You can use both 2D and 3D but I suggest 3D. Plotting results is not difficult just refer to any example in the COMSOL Documentation that have a wave simulation.

I'm actually more interested in 2D simulation due to computational cost. Which 2D approximation do you think suitable for this, plane stress or plane strain? Would the simulation become problematic if for shear wave the wave displacement is in the out of plane direction, for example?

I see it is difficult for me to answer which approximation is suitable without knowing two things: the geometry of your structure and the arrangement of the transmitters\receivers used. However, you need to choose the approximation in a way that allow you to capture the out of plane disp. like to choose plane stress approx. for thin plate and the propagation direction is parallel to its surface.
