Mushroom respiration rate is very high. If you pack in a high barrier film there will be soon not enough oxigen and they will start fermentative metabolism. Is spoils the product in very short time (even at refrigeratd temperature).

You should select a film with a permeability that matches with mushrooms respiration rate. This is a dificult material to be preserved, but you can try with metalocenic films or adjusting permeability through microperforation in the packaging (as with http://perfotec.com/).

The best way to protect mushrooms during packaging is with the use of upcoming PCM technology which will maintain a particular temperature and thus avoid liquefaction. A PCM has the ability to store and release large amount of heat/energy while maintaining constant temperature. Unlike other insulating materials, PCM on reaching its melting point, absorbs large amount of heat and releases its stored latent heat with solidification.
