Hi Arianna, there's a live stain probe from STEMCELL Technologies that stains for live neurons. It works on zebra fish too (although it can be used on mouse and human). It is a membrane-permeable fluorescent probe that can be washed off after live neuron detection, leaving you with unlabeled and viable cells for your downstream applications.
for immunhistochemistry the panneuronal antibody directed against NeuN (Neuronal Nuclei antigen) should work in fish. There is a lot of literature available about it.
