BLDC motors are widespread used in electric vehicles. Their performance depends on relationship between a motor's electrical characteristics and mechanical characteristics which is not same as that in brushed DC motor. So how do the motor’s mechanical characteristics behave based on the voltage rating?

maybe I did not fully understand your question so please forgive if the answer isn't straight to the point.
If you consider BLDC machines controlled by field oriented control, the theory describing the electrical behavior returns to a system of two components d and q.
As there is a perfect correlation to the two components controlled in a brushed DC.machine, there is no difference in their behavior.
Generally, electrical machines are controlled by magnetic field, respectively current. The behavior is independent on the voltage rating.

The speed vs torque curves of DC machines that use feedback controls provide a mapping of speed vs torque at various operating voltages. This mapping largely depend on the winding construction of the motor (see link below). Remember the heart of a "brushless motor" is an AC machine. By using feedback we make it appear equivalent to a DC machine (as we increase voltage we increase speed).
