You probably no longer have the same email. I hope you are well and I don't know if you are retired or "still active" . I thought I saw on Linkedin that you work for another center.

Surely it must have happened to you as it did to me that you tell someone you are a chemist and a series of questions have fallen on you that we are supposed to know because of it. How does an atomic bomb work, what happens if we mix hydrogen peroxide with alcohol, what can substitute for Lithium that is easier to find, how many ways are there to desalinate sea water, ......

My question for you is easier (I think): I have read in many articles (some of yours) that fructose sweetens about twice as much as sucrose. That is to say that with half the amount of fructose I get the same or more sweetness than with sucrose and therefore I must use less amount to get the same end. By taking less, are we helping the pancreas to metabolize the sugar present by working less? Is this good for diabetics and pre-diabetics? Do you know anything about this?
