From my experince as an Air conditioning Engineer, you won't need to worry about the ventlation rates or the number of holes or fan speed, I think you need to worry about 'Mass transfer'. If the Egg Incubator needed a certain percentage of moisture or humidity ratio, then there must be a source of water in the incubator, If I am right, then that source will be a major parameter in calculating all other factors you are asking about. For me, the most critical factors related to the egg incubator venation are to control the carbon dioxide and humidity levels (you may need a good hygrometer). Additionally, there are some of the ventilation requirements that you should take in consideration such as the incubator size, the number of eggs, and stage of incubation (during the embryonic development or growth?).
