I am wondering as fungi are also oxygenic organism and they must produced ROS in their cells. How they can protect themselves from these toxic ROS? Does Fungi have antioxidant systems? How we can determine them? Could we use the same protocols of plants antioxidants analysis for fungi?

In fungi, you can find the same antioxidant systems as in many other organisms. There are several protocols to assess the activity of antioxidant enzymes such as superoxide dismutase, catalase, glutathione peroxidase, glutathione reductase, among others. To evaluate the ROS effect on cell membranes, you might want to quantify MDA or lipid peroxidation.
It is possible to evaluate ROS generation (e. g., hydrogen peroxide and superoxide anion) by a very simple histochemical method which is described here: http://www.fgsc.net/fgn37/munkres1.html
I have used this protocol in the past quite often and it usually gives reliable and reproduclible results. However, it is not a quantitative measurement of ROS levels. If you want to study qualitative differences it gives a good overview.
