If the IV in question is linked by your model to the DV, then yes, the estimated path/regression coefficient indicates the degree to which scores on the DV are expected to change per unit change in the IV. If the coefficients are standardized, you may compare the magnitude of that coefficient to that of others in the model if you wish to draw inferences about relative degree of relationship or "influence."

As is the case with multiple regression, if IVs are correlated, the estimated coefficients may not align with zero-order correlations as regards strength of association.
