Me and my colleagues are planning a study to assess the power of kick of professional soccer players, but we are having difficulty to find a closest possible protocol of the real sport gesture.
It really depends on whether you mean mechanical power or an outcome measure such as maximal foot or ball velocity.
To measure mechanical power you will most likely need a force platform and/or motion analysis system. You could then measure either lower limb power (using something like a CMJ) or power during the actual kicking motion itself.
For ball velocity - there are some cheaper commercial options such as the Adidas SmartBall referred to above - although I have not seen this particular method validated against motion analysis techniques (e.g. Vicon/ Qualisys etc).
Now we are analyzing what procedure to use based on these you suggested as well as on those we had already found previously. Possibly we will decide to create some mechanism with dynamometry, but using the real gesture of the kick, like those developed for wrestlers.
Just another pointer, to remember that during maximal kicking not all forces which act to accelerate the lower leg and foot are supplied directly by the muscles but from 'motion-dependent' or 'interactive' forces as well, which you would have to take into account if performing dynamometry!
