I have been searching the literature but have not been able to find some material that would fit this criteria. An organic material which can switch from amorphous to crystalline state by the use of laser.
If you can guide me to some literature it would really be helpful

I think you may find it interesting to start your search on rewriteable optical media. A phase change material (PCM) - in some cases a polymer - is used which reacts to a given wavelength.

Actually, I am looking for organic material which can be used for non-volatile memory and can be programmed using a laser rather than electric field. If you know any literature specifically on this topic, please do refer it to me.

At moment I do not have time to elaborate better, but thin films of Alq3 may do the trick.

Some of the guys doing holographic memory work may have what you need as well. I am not well read in this field, but I've seen some high level information.
Not exactly what you are looking for, but in early 1980's I worked on a program that studied several phase transition materials. One was Vanadium dioxide, which switches from semiconductor to metallic with temperature, and if I remember right, a fairly low temperature, less than 100 C, I think close to 70 C. They demo'd a laser with this stuff on a curved laser mirror, and hit it on the back side with an e-beam, that heated it, and caused the laser to lase just at that spot, so they could steer the laser with no moving mirrors, just depending on where the e-beam struck the back side of the mirror. I imagine a laser could heat it just as well. I think the name of the company was Voight. the PI was William Case. I worked on Samarium Sulfide, as it switches with pressure, we did publish a few papers on it, and there is my dissertation, that was with the Univ of Arizona.
