The major classification, according to which those polymers may be differentiated, is in type of glycosidic linkage. Cellulose is a typical representative of β-1,4-glucan (glycosidic bond is formed between C1-O-C4 atoms). However, there are a number of other glucans, such as β-1,3-glucan (like curdlan), mixed β-1,4-1,3-β glucans, β-1,6-branched β-1,3-glucan, cyclic β-1,2-glucan etc. Please, check the following link:

There is also possibility to differentiate cellulose and other glucans by solubility in water, however, I am struggling to find a link to confirm it.
