A very good and readable text is the one by Hair, Hult, Ringle, & Sarstedt (2016), A primer on partial least squares structural equation modeling (PLS-SEM) (2nd ed.). Los Angeles, CA: Sage Publications. Their examples use the Smart PLS program, so this is a good one from which to learn.
