Carrageenan induced paw edema is predominantly used model, however if you want more precise mechanism you should use special inflammatory agents such as histamine, serotonin, etc.
Induction is done by intra-plantar injection of small amount of these solutions...and you can track the changes by measuring the paw thickens (highly variable results due to low precision!) or by measuring the paw volume (again low precision!). You can measure the amount of excreted dye in paw tissue after i.v. injection, that is quite good way to be sure.
