During refrigeration, you cannot dry fruits. Only it will equilibrate with RH inside the fridge. You do need either tray, vacuum or freeze dry if you would like to enhance the shelf-life or produce a quality food.

Refrigerator is hard to dry moist fruit. Depend on your research purse, frozen-dry may help you get better dry samples.
