Greetings,

In order to determine the degree of hydrolysis of protein isolates by the pH-stat method, we take the pK of the alpha-amino group of our proteins as 8 (according to the literature). However, our experimental conditions for the enzymatic hydrolysis will be at 37 ◦C for one sample and 70 ◦C for another one. Will this difference alter the significance of our study if we use the same pK in the formula for both of the samples?
