I would echo Brandon Alexander 's response that this is not the most straightforward approach. here are some points to consider:
1) bioinformatics data does not contain information to carry attacks on IoT devices except for login and passwords, but that is not bioinformatics data.
2) Data breaches are done to systems such as IoT devices not the other way around.
3) One can exploit the data to poison it and that is a real issue but this is a separate issue from IoT.
4) I would not use image-trained neural networks for bioinformatics data since it is easier to just have the textually encoded sequence processed directly rather than through an image (unless you are talking , for example, about tertiary protein structure or similar structural information which might be best processed by convolutional neural networks in non textual formats). This process can again be compromised through data poisoning or Trojans, but this is a separate issue from IoT.
5) I would initially do a divide and conquer approach to your problem statement. For example, treat IoT vulnerabilities as a separate issue from quantum computing.
