I measure the wavelength of material in a spectrophotometer and it peaks at 275 and its absorbance is 100. I mix it with an adsorbent and it adsorbs the first material, but when I measure the wavelength again it peaks at 250 and the value at 275 is 10. At first, its absorbance was 100 and the second measurement turns out to be 10. Can I say that it is 90 percent adsorbed with this measurement?
Interesting question. With this single experiment, I would answer "not quite".
I would first check that the second material you add (adsorbent as you referred to it) does not modify UV absorbance at 250-275 nm. Until you do this, you can only say that the mix of compounds behaves differently from the first single compound. And even then, you don't know exactly how both compounds interacts : does the second compound act as an UV screen for the first, do they complex...?
The only thing you can tell is that "adding the second compound reduces absorbance of the first compound by 90%".

Absorbance is logarithmic. An absorbance of 100 (or even 10) is nonsense.
Check your instrument the largest absorbance that can be measured is normally around 3 such an absorbance implies that the amount of light passing through the sample is 0.1% - an absorbance of 10 implies 0.00000001% which you are never going to be able to measure given the limitations of stray light and dark current in the detector.
