Hi, if you want to evaluate the ontioxydants proprieties, you can do the the dosage of phenolic compound, the test with DPPH or the test with vitamine C.

Dear john j. Sanchenz, I want to evaluate the antioxidation of chitosan gelatin blended film. I want to know the procedure, how to evaluate antioxidation by using DSC. 

ASTM D3895 is a method suggested by Shakeel Ahmed. It is very quick and easy.  I also suggest running a TGA in an air atmosphere.  Both will give you some quick and valuable information about the effectiveness of your antioxidant.

if you have enough sample and a discontinuos mixer or a laboratory extruder you can compare the trend of torque against time for the sample without the antioxidant and the sample with the antioxidant.  Or you can maesure the MFRs of the molten samples kept for increasing times above the melting temperature.

One can find liberation and addition of oxidation properties of compounds by using FTR, NMR, and FMS. In addition analysis of an oxidation process can be done with relative ease by IR spectroscopy, by recording carbonyl groups band. One can also use the DSC technique considering OIT analysis.

we recently designed NRP, a simple and cheap method for rapid assessment of total antioxidant activity in large amount of samples. You can also use it to obtain spatial distribution of antioxidant status if you are working with tissue samples. The method is very precise and accurate due to its simplicity - you only need a piece of nitrocellulose and one chemical - KMnO4 (very well defined strong oxidant).
