I would like to conduct an experiment to prove the bacteria which we have used in our experiment having a good proteolytic system. Initially we have used casein hydrolysis method on agar plates, but the results are not satisfactory to conclude the experiment. So, please share your experience that may helpful to my experimenet. Without a doubt, OPA (o-phthalaldeyhyde) is the best method for the assesment of proteolytic activity in dairy produts.
