I would recommend Klausnitzer, B. 1991: Die Käfer Mitteleuropas - Larven 1 -5
I don't know in which volume the Scirtidae are. I have the correspondant key for the imagines (Freude/Harde/Lohse) but not the volumes about the larvae.

This work is in German and for the area of Central Europe - I don't know if so it is suitable for you in Italy?
Perhaps you find s.th. under the elder name of the Scirtidae: Helodidae
Dear Matteo. You can check The Water Beetles of Florida by J.H.Epler. Some larvae are undescribed but you can find a Key to genera of Scirtidae larvae of Florida as well for adults. However I do nor know if you can apply them to the Italian Scirtidae.
In addition to Rudi's suggestion there is also: Süßwasserfauna von Mitteleuropa, Band 20/17: Insecta: Coleoptera: Scirtidae. (2009). ISBN-13: 9783827410740
Bernhard Klausnitzer is the editor. The book has both adult and larval keys. Again the book is in German and is for central Europe.
I worked with the book Drew suggests. It is not only featuring Central Europe, but the whole west-palaearctic, and covers Italy, too (Indeed, it is still written in German).
For me this has been the best work for that family I ever used (but I am German).
I finally used the on-line key suggested by Timur as it was the easiest to access.
Of course with the help of the translation tools of google chrome. I had to interpret it a bit as the translation was not perfect but i reached my purpose.
