Goodman book "Statistical Optics" is without doubt the most general. However it is quite hard to follow. I highly recommend "Noise Theory and Application to Physics: From Fluctuations to Information (Advanced Texts in Physics) by Ph. Refregier. It will give you the basis of statistics in an easy way.
