The fresh ginger water content is high so adding some pieces will increase the water content of honey and liquefied the honey. More than that some chemicals might be also behind such phenomena.

Fresh ginger has a high water content while honey is almost water free. Adding the two together, the honey attracts the water content of the ginger. The process that took place, i think is osmosis.
