There are many sensors that may be used to do this. If you use accelerometers, any motion of the hand, arm, or whole body will be captured as well. You will have to account for this in the development of your system.
If you just want to detect motion of the fingers with reference to the hand, I would recommend using hall-effect sensors or something similar. Hall-effect sensors can be used as joint-angle transducers on the fingers with a permanent magnet on the hand to create a frame of reference.
