Try a keyword search using a popular search-engine (i.e. Google or Bing) to find relevant documents, articles and resources. This is one of the best ways to begin to research a topic yourself and brush up on those research skills at the same time. Be sure to include the compound(s) of interest as a keyword in your search (e.g. cedar oil analysis).

BTW: No analysis of light is performed during GC-MS. The correct name of the technique is: "Gas Chromatography Mass Spectrometry".

As you already mentioned GC-MS is the most common technique for the analysis of essential oils. Since one dimensional GC cannot fully resolved all the compounds, two dimensional GC was introduced where you can analyse on the second dimension column either piece of first dimension effluent or whole sample.

Most common detection systems applied are MS and FID.

Regarding the analysis of different plant extract, that depends on their complexity and can be used also GC-MS, multidimensional gas chromatography usually then in headspace mode.
