Almost all research ethics guidelines and regulations will address research on children, in one way or another.  The latest CIOMS draft revisions has some good discussion of the topic, esp. at Guideline 17 (prior versions also addressed such research).  The Declaration of Helsinki points 28-30 cover children (qua individuals unable to consent), though without elaboration of principles.  The classic Belmont Report gets more into underlying principles, though its discussion of research on children is less systematic.  You should also of course consult your own country's regulations on the matter (I'm not familiar with French research regulations myself).  Links are attached.

As far as I know all research study either quantitative or qualitative, approved or  not yet approved by a panel of reviewers must first passed through an ethics committee. There are requirements and policies for international and local ethics board.  One of the tasks of the ethics panel of reviewers to is to see to it that human lives are respected and not violated and made as mere research experiment. Ethics is now an international and local requirement for any research work undertaken. Consult your country for its specific laws and guidelines.

The British Education Research Association (BERA) has guidelines. One of the main issues is consent, from parents, and using appropriate language when gaining consent from children themselves. Perhaps piloting a consent form with the age-group of children you are targeting would be useful.
