Using AMOS one can test a measurement (CFA) model. However, CFA is preferred if there is strong support/evidence for a per-existing factor structure. If the structure has yet to be explored then EFA is preferred. However, one can specify and test exploratory factor models in AMOS also. But it is not preferred for this purpose.
