It very much depends on what you are trying to achieve. Maybe if you could provide some more details it would help others provide a more replete answer.

I managed to make suspended electrodes by leaving the first SU-8 layer undeveloped, blanket evaporating gold, forming an etch mask and passivation layer from another SU-8 layer and then developing both SU-8 layers simultaneously.

I know there are several papers on multi-layer SU-8 processing and have attached a popular one to give you a starting point.
