I can see the images and these are interesting but from this we cannot identify the hydrates and confirm what is what. I would suggest you do few things before analyzing your images.

1. Study the literature and find the morphology of Ettringite, CH and CSH or other expected hydrates you think that might be available.

2. Secondly perform some EDX analysis to see the elements present at different location. Forexample you think you have located a gypsum particle some where then just do EDX at that location and confirm that is there calcium and sulphur present there to confirm your claim. 

3. You should know the chemistry of raw materials you have added in your mix by doing some XRF so that you can assume some hydrates which might be formed in your mix.

Please do try these steps I am hopeful you will be able to make some good conclusions from these.

I would suggest using BSE imaging of a polished cross-section to get a rough approximation of coarse porosity and the degree of hydration. You can get more information on the methodology from the PhD thesis of a former student of mine, Mark Whittaker.

I also suggest that if the goal is getting some idea of the elemental distribution and phase composition by EDS point or mapping analysis (for example for C-S-H), you ned to work over a flat polished section. Unfortunately, results based on fracture surfaces can lead you to wrong results. Polished sections could be particularly useful in your case, as you can get some idea of the space filling using different binders. You can embed a piece of your cement paste in epoxy and then polish the surface. For a general phase distribution analysis, polishing down to 1 micron works fine in our lab. 

Alongside your SEM analysis, I think you should use other complementary methods like QXRD and thermal analysis, for comparison.

SEM pictures are not clear to specify hydrated product of cement paste. First , search previous literature, take clear pictures from SEM what you are going to explain.

For every SEM images should take a number of spot EDS analysis.

The EDS analysis use for calculation of Ca / Si ratio for the Ca(OH)2 or C-S-H.

If the lower Ca / Si ratio (based on atomic %) show that reduced Ca(OH)2 and increased C-S-H.
