Their price , purity, availability, solubility are very diff. I am super confused as to which one to select to perform protein inhibition assay in a commercial assay kit those buffer pH is 7.5. I would like to go with the cheapest if it has satisfactory solubility.

At pH 7.5, all the three forms will be ionized, therefore use the cheapest one. When weighing, take into consideration the equivalent of amoxicillin in 1 equivalent of the form to be used.

Your question is tagged "protease inhibitors", and you mention protein inhibition. Ampicillin does not inhibit proteases, and it does not inhibit synthesis of proteins. Ampicillin inhibits synthesis of bacterial cell wall (peptidoglycan); more specifically, it inhibits crosslinking of peptidoglycan strands by transpeptidase enzymes.
