Can I use AHP or other MCDM techniques to compare two alternatives?
Also, did anyone use AHP in two stages, for example, compare hybrid cars to electrical ones in the first stage, and after concluding that electric cars are better, choose the best electrical car type?

You can compare any 2+ alternatives with AHP, yes.
The two stage problem you mention is however not a two-stage AHP. Rather, it is two problems: #1 determine what powertrain is best, #2 decide choice within the best powertrain. You can use AHP to solve both problems, but they're not the same thing.
And yes, you need 2+ criteria to use AHP, as Ufuk said.
