You should be aware of the very complex system and of slow kinetics of dissolution and adsorption of species formed in the continuous phase. This should hold for lime and components of lime regarding dissolution and for all particle surfaces regarding adsorption. Shift in pH will induce a readjustment, which will depend very much on history of the dispersion. Can you repeat the experiments with slight modification getting exactly the same curves? I suspect greater variability.
I have serious doubts what is measured as 'zeta potential' in this very complex system, maybe something derived from the movement of the fine particles with different chemical nature.
Maybe better study this complex system through settling and packing behaviour.
