Will the high temperature used in cell extraction by heating denature the release protein?

I am planning to prepare my microalgae extract for research on wastewater treatment. Was looking into papers that have reported on the methods of extraction. Some of the papers mentioned that using water and heating at 60-80 degrees Celsius would help in releasing the intracellular compound in the cell. But why such a high temperature will not denature the proteins/compounds released?
