I find it pretty confusing since xanthan gum has both glucuronic and pyruvic acids in its chemical structure, it should release H+ ions upon solvation in an aqueous solution and make it acidic.
Dr. Ghosh, thank you for your answer. However, as I know, xanthan gum is an anionic polysaccharide that is easily dissolve in water. Therefore, xanthan gum should be negatively charged in aqueous solutions.
